Soft Ball
What can I make with my overcooked “hard ball” or “soft crack” sugar candy base for peanut butter fudge?
Sometimes when making peanut butter fudge, I have accidentally overcooked my sugar mixture composed of:
2 cups of granulated sugar
1 cup of milk
4 tablespoons of unsalted butter
After that enters “hard ball” or “soft crack” stage, what can I do with it? I’m definitely no candy-maker, so I usually just throw it out and start over again. =( Give me something to fall back on.
I use the microwave and haven’t had one problem
Peanut Butter Fudge
Ingredients
1 cup butter, plus more for greasing pan
1 cup peanut butter
1 teaspoon pure vanilla extract
1 pound confectioners’ sugar
Instructions
Microwave butter and peanut butter for 2 minutes on high. Stir and microwave on high for 2 more minutes. Add vanilla and confectioners’ sugar to peanut butter mixture and stir to combine with a wooden spoon. Pour into a buttered 8 by 8-inch pan lined with waxed paper. Place a second piece of waxed paper on the surface of the fudge and refrigerate until cool. Cut into 1-inch pieces and store in an airtight container for up to a week.
